3 eggs
Preheat oven to 350°F. Allow ingredients to come to room temperature.
Prepare graham cracker crust. Grind graham crackers and blend with butter or margarine. Optional walnuts may be ground and added.
Blend cheese and sour cream by hand or with a mixer (not with a blender) until smooth. Add lightly beaten eggs.
Add sugar. Mix until there are no lumps. Add vanilla.
Pour into a 10" springform pan. Bake 1/2 hour at 350°F. Turn off oven, but leave cake in oven for 1 hour.
Take out and cool. Add optional topping. Chill overnight.

1 can pie filling (optional for topping--preferably cherry or blueberry--I don't use any)
