Snickerdoodles III (P, TNT)

3/4 cup sugar
1 stick margarine, softened
1 egg
1/2 tsp. vanilla extract
1-1/3 cups flour
1 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon

Preheat oven to 350°F. Reserve 1 tablespoon sugar.

In a large bowl, beat remaining sugar and margarine with an electric mixer on medium speed until well blended.

Beat in egg and vanilla until light and fluffy. Add flour mixed with baking powder and salt on low speed until a stiff dough forms, scraping down sides of bowl frequently with a rubber spatula. Form dough into 1" balls.

In a small bowl, stir together reserved 1 tablespoon sugar with cinnamon to make cinnamon sugar. Roll balls in cinnamon sugar and place 2" apart on lightly greased baking sheets.

Bake cookies 8 to 10 minutes, or until flattened and firm in center. Let cookies cool two minutes on sheets, then remove to racks and let cool completely. Store in a tightly covered container.
