1 cup shortening or margarine
1-1/2 cups granulated sugar
2 eggs
2-3/4 cups white flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons granulated sugar
2 teaspoons cinnamon
Preheat the oven to 400°F.
Cream the shortening or margarine together with the sugar (a food processor is ideal for this), then beat in the eggs individually.
Sift everything remaining, except the sugar and cinnamon, together, then beat into the sugar mixture.
Mix the sugar and cinnamon together and place into a shallow bowl. Scoop the dough out with a teaspoon and shape into balls about 1" in size. Roll the balls in the cinnamon-sugar mixture until coated all over, then spread out on a cookie sheet. (Separate them, as they will spread out to about 2" in size.)
Bake for 8 to 10 minutes, until just beginning to brown on the underside.
