Refrigerator Cookies, Butter (D, TNT)
Source: from the back of the box of Zante Dried Currants
Yield: approximately 4 dozen cookies

1 cup butter (or margarine, but the butter flavor is important in these, I think)
1 cup powdered sugar
1/2 cup granulated sugar
1 egg
2 tsp. vanilla (I love vanilla and use 1 tbsp.)
2-1/4 cups flour
1/2 tsp. baking soda
1 cup currants (or leave them out if you want plain butter cookies)

Preheat oven to 350°F.

Combine butter, sugars, egg and vanilla; beat until light and fluffy. Combine flour and baking soda. Stir into butter mixture and mix well. Stir in currants (if using).

Shape into a 12" roll. Cover and chill until firm.

Slice into 1/4" slices; place on ungreased cookie sheets. Bake at 350°F for 10-12 minutes. Cool on wire racks.
