Raisin-Coconut Cookies (P, TNT)

Yield: 2 dozen

4 egg whites
3/4 cup flour
1/2 tsp. baking powder
1/4 tsp. cinnamon
2 cups confectioner sugar
1 cup coconut, shredded
1/2 cup raisins
1/2 cup walnuts, chopped

Preheat oven to 325°F. Grease cookie sheet.

In a large mixer bowl beat egg whites until stiff. Add flour, baking powder, cinnamon and sugar, and mix well. Add coconut, raisins and walnuts, and mix well.

Drop dough by teaspoonfuls on cookie sheet, approximately 2" apart. Bake for 15 minutes. Remove from cookie sheet and cool.

Poster's Notes:
I think you can omit the walnuts with no problem, worth a try.
