Cookie Dough:
Filling:
Make Cookie Dough:
Cream next 4 ingredients until light and fluffy. Add vanilla and egg. Stir in flour mixture until blended.
Set aside.
Make Filling and Assembly:
For each cookie, flour hands, shape 1 tbsp. dough around each peanut butter ball. Place 2" apart on an ungreased cookie sheet. Flatten with the bottom of a glass dipped in sugar. Bake 375°F for 7 to 9 minutes.

1-1/2 cup flour
1/2 cup cocoa or carob powder
1/2 tsp. baking soda
1/2 cup sugar
1/2 cup brown sugar
1/2 cup soft margarine
1/4 cup peanut butter
1 tsp. vanilla
1 egg
3/4 cup peanut butter
3/4 cup confectioner sugar
Combine first 3 ingredients of the dough in a bowl and blend.
Combine filling ingredients in a small bowl.
Roll into 30 balls.
My mother makes these cookies (I would never patchke like this and, anyway, they're too fattening!) and then takes them to friends because she can't eat peanut butter.
