1-1/2 cup sugar (I used unbleached organic)
Preheat oven to 350°F.
Process dried fruit to pretty well-chopped (about raisin-size).
Using an electric mixer beat sugar, shortening, water, egg whites, and vanilla until creamy. On a lower speed, mix in oats, flour, and fruit.
Drop by rounded tablespoons on to silpat- or parchment-lined baking sheets. Bake 20 minutes or until tops begin to brown.
Allow baked cakes to cool on a rack, melt chocolate (I did it in the microwave). Place cooled cakes on parchment paper and decorate tops with melted chocolate using a spoon to drizzle.

1 cup chocolate kisses or other chocolate
When you suddenly have friends in town and stopping by and you have no baking powder in the house and cookies really seem like the easiest thing to make... and thankfully you have an otherwise well-stocked pantry.
