Mohn Cookies (P, TNT)

Yield: 5-7 dozen

3 eggs
1/2 cup oil
1-1/2 cups sugar
1/8 teaspoon salt
3 cups flour (plus more more rolling out)
4 teaspoons baking powder
1/4 cup poppy seeds
1/4 teaspoon vanilla or lemon flavoring OR 2 teaspoons orange zest

Mix first 4 ingredients until light and fluffy.

Sift together flour and baking powder, and add a few tablespoons at a time until incorporated. Add poppy seeds and flavoring, mixing well.

Allow dough to rest, in the refrigerator or freezer for an hour or so. Roll out on well-floured pastry cloth to 1/8" thickness. Cut with cookie cutter or slice into diamond shapes. I usually have to do this in 3 or 4 parts.

Bake on greased cookie sheet at 375°F until light brown, about 12-15 minutes.

Poster's Notes:
My stepsons love them (gotta make a batch to take with next weekend and another the weekend after) and while the originals were only cut in diamond shapes, when my daughter was small, we found out that cookie cutters worked just fine.

If you want to make variety, you can: leave out the poppy seed; substitute sesame seed; use zest from orange, lemon, or lime; leave out the citrus and add cinnamon or nutmeg, or flavor extracts (about 1 teaspoon), to each quarter.
