2 cups flour
Preheat oven to 425°F degrees (200°C).
Mix first 8 ingredients together. The batter is very thick. Stir in nuts and fruit. Divide into thirds.
Shape loaves. Place on parchment lined jellyroll pan. Bake for 10 minutes. Turn down heat to 350°F (180°C). Continue to bake for another 15 to 20 minutes. Tops will be golden and not much spring to the touch. Remove from oven.
Cool for 1/2 hour. Slice. I do not put the slices back in the oven. However, if you like crispier mandelbrot, return slices to oven for a few minutes, turn and bake the second side, if desired.

2/3 cups sugar
2 eggs
1 tsp. baking powder
1-1/2 tsp. vanilla
1/2 tsp. cinnamon
1/2 cup oil
1 tbsp. lemon juice, fresh
2/3 cup nut pieces
2/3 cup raisins or other dried fruits
For the dried fruit, I have used craisins, apricots, dates. You can also substitute chocolate chips.
