Mandelbread, Pesach III (P, KLP, TNT)

Yield: 2 dozen

3 eggs
1 cup sugar
1-1/2 cups matzo cake meal
1/2 cup potato starch
1/2 cup oil
1/2 tsp. cinnamon
3/4 cup chopped walnuts

Beat eggs, add sugar, and mix well. Add cake meal, potato starch, oil, cinnamon, and nuts. Mix well.

Cover dough with plastic wrap and refrigerate for at least 2 hours. Divide dough into thirds and form 3 loaves on ungreased cookie sheet. Sprinkle tops with a sugar/cinnamon mixture.

Bake in preheated 350°F oven for 30 minutes. Remove from oven and slice while still hot. Place slices on sides and return to oven for 5 minutes to dry out. Remove from oven, turn pieces over and dry other side, 5 minutes in oven.
