Mandelbread, Pesach I (P, KLP, TNT)

2-3/4 cup matzo meal
3/4 cup potato starch
1/2 teaspoon salt
2 sticks unsalted margarine room temperature
2 cups plus 4 teaspoon sugar
6 large eggs
1-1/2 cup chocolate chips
1 cup chopped walnuts
1/2 teaspoon cinnamon

Preheat oven to 350°F, and when baking, do it rack in center of oven.

Cream margarine then add 2 cups sugar. Beat until light and fluffy.

Add dry ingredients one cup at a time. Add 1-1/2 cups chocolate chips and walnuts and combine with wooden spoon. Dough will be sticky.

Divide dough in half. Make two rectangles. Make sure rectangles are not too thick in center. Top with remaining sugar and cinnamon. Top with remaining chocolate bits.

Bake until golden, about 40 minutes. Transfer to wire racks and cool 10 minutes. While warm, transfer to cutting board and cut crosswise into 3/4" pieces.
