Mandelbread, Cherry (D, TNT)
Source: "Simply Irresistable," by Sheilah Kaufmann
Yield: 3 to 4 dozen

1/2 cup vegetable shortening
l cup sugar
3 large eggs
3 cups all purpose flour
2 teaspoons baking powder
Pinch of salt
l teaspoon vanilla
l teaspoon almond extract
1/2 cup EACH of red and green maraschino cherries, cut up
1/2 cup (or more) golden raisins
6 ounce butterscotch morsels
1/2 cup chopped walnuts or almonds (optional)

Icing:
1/2 cup sifted confectioners' sugar
1 teaspoon vanilla
1 tablespoon butter, softened
1 to 2 tablespoons warm milk

Preheat the oven to 350°F.

In a large bowl, with an electric mixer at medium speed, cream the shortening and sugar. Add the eggs, one at a time, beating well after each addition.

Sift together the flour, baking powder, and the salt; using a wooden spoon, slowly add the flour mixture to the bowl. Stir in the vanilla, almond extract, cherries, raisins, butterscotch morsels, and the optional nuts.

Form the dough into 3 strips, each about 12" long and 2" wide, and place all 3 on a large greased and floured cookie sheet.

Bake at 350°F for 20 to 25 minutes, then cool the strips on a wire rack.

Meanwhile, prepare the icing by combining the sugar, vanilla, and butter with enough warm milk to form a fairly liquid mixture. Pour the icing over the cooled strips and cut each strip into twelve l" slices.
