4 eggs (I use jumbo eggs)
Cream together eggs and sugar. Add oil and mix well.
Add vanilla and almond extract. Add baking powder to flour, then add dry mixture a little at a time to the egg and sugar mix.
Add nuts, cherries and/or chocolate chips. Place in the refrigerator for at least 2 hours.
Turn dough out onto well-floured board. With floured hands, divide batter into 6 or 8 strips. Put on greased cookie sheets. Bake 45-55 minutes at 350°F, until tops are light brown.
Remove from oven. Slice while still hot, into 1/2" slices. Put back into oven, with heat off for 20-25 minutes.
(If you want them crispier, leave heat on for another 15 minutes then shut heat and leave in until cool.)
Remove from oven and let cool. Sprinkle tops with powder sugar. Store in plastic container or tin. They keep for a long time.
