Hamantaschen, Working Mom's (D/P, TNT)

515g (approx 1 lb. 2ozs.) moist yellow cake mix
125g (approx 4 oz.) all-purpose flour or plain flour
30ml (2 tbsp.) water
2 eggs
Filling of your choice

Preheat the oven to 375°F (190°C). Grease cookie sheets. Or use baking paper.

In a large bowl, mix together the cake mix and flour. Stir in the eggs and water to form a stiff dough.

On a lightly floured surface, roll the dough out to 1/8" thickness. Cut into 3" round circles and place 2" apart onto the prepared cookie sheets. Place a teaspoon of filling into the center of each cookie and pinch the sides to form three corners. Use egg wash with extra egg.

Bake for 20 to 25 minutes in the preheated oven, or until lightly browned. Allow cookies to cool for 1 minute on the cookie sheets before removing to wire racks to cool completely.

Poster's Notes:
This is a recipe that I have found on the net, and it is the best recipe for Hamantaschen that I have ever made and we tried them all this year, I had a factory at my place, every recipe that was submitted was tried and rejected until this one which is the easiest and best one ever.

I apologize for the approximate conversions as this recipe is in metric measurements, and I just converted on my own weighing machine which is in pounds and grams.
