Hamantaschen, Quick Prune Filling (P, KLP, TNT)

Yield: About 2-1/2 cups

12 oz. pitted prunes
2 tbsp. sugar
1 tbsp. boiling water
1 tbsp. orange juice or water
1/2 tsp. cinnamon

Place all of the ingredients in a food processor bowl and process until the prunes are pureed.

Remove the metal blade, and place the processor bowl in a microwave. Heat on medium-high for 3 minutes.

Place the metal blade back in the bowl, then process until the mixture is finely pureed. If necessary add a little more water.  Use with Hamantaschen, w/Prune Filling II (click here for recipe).
