1 cup butter or butter-flavored margarine
Beat butter, sugar, eggs and vanilla together. Add flour.
Now for the reason it is so simple. Form into 3" logs, wrap and freeze. Before making, remove from freezer and let thaw slightly. Slice in 1/4" slices and fill and form.
Bake at 350°F until done, about 20 minutes.
Poster's Notes:
Not rolling keeps the dough nice and tender. It frees counter space so everyone can crowd in the kitchen and help. I'm getting mental snapshots of all the kids who have hung out and made hamantaschen with me from preschoolers through army to young marrieds with their own kids in tow.

Besides being very delicious, this is I think the easiest recipe in the world. The basic recipe is from "The Jewish Holiday Do-book." It is from 1976 and I think that may be when I first used it. It has been baked along with my children and their friends every year since then.
