2 cups brown rice flour
Soften margarine. Preheat oven to 350°F. Grease cookie sheets or use parchment paper.
Place all ingredients in a large mixer bowl and beat together until the dough is smooth. Roll into a ball and refrigerate until firm, covering completely in plastic wrap. Divide into four parts.
On a well-floured board, roll out each portion to about 1/8" thick. Using a 2" round cookie cutter, cut out circles. Place 1/2 tsp. of apple butter on each circle.
To shape into a triangle, lift up the right and left sides and have them meet in the center above the filling. Bring the top flap down to the center to meet the two sides. Pinch edges together. Bake for 20 minutes at 350°F.

I thought I would share this recipe for those that might want to avoid wheat and sugar. You can also use fruit only spread for the filling. We've even used peanut butter and that was tasty, too.
