Date-Apricot Filling for Hamantaschen (P, TNT)

Yield: About 3 cups filling, or enough to fill 36 to 48 hamantaschen, depending on size

2 cups pitted dates
1-1/2 cups dried apricots
1/2 cup sultana raisins
2 tsp. grated lemon rind, if desired
3 tbsp. almonds, coarsely chopped

Combine all ingredients in the processor and process until minced, about 20 seconds. Scrape down sides of bowl as necessary.

Mixture can be prepared in advance and refrigerated for several days, or frozen.

Poster's Notes:
Here is an easy filling using dates and apricots. (You could omit the apricots and use more dates if you like.) This filling is wonderful and so easy!
