Chocolate Filling for Hamantaschen for a Crowd (P, TNT)

Yield: for 100 Hamantaschen (click here for recipe)

3/8 cup sugar
1/3 cup cocoa
1/2 pound cake crumbs (see in method)
1-1/4 tablespoons eggs
1 ounce butter
1 teaspoons vanilla
1/3 cup liquid marble chocolate
2 tablespoons orange juice
4 ounces mini chocolate chips

Process pound and/or marble cake into fine crumbs, add cocoa and sugar, mixing well.

Melt butter and add to the crumbs.

Beat eggs lightly with vanilla and add to the mixture. Fold in the mini chocolate chips and moisten the mixture with chocolate syrup and orange juice.

May be used for other cookies as well.

Purim 2002 - Hamantaschen baking: Adjusted this recipe by adding liquid marble chocolate from BakeMark and orange juice. This filling is more flavorful and of a nice moist texture when baked.

Liquid Marble Chocolate is available in bakery supply stores and sites. My reason for using it was to give the chocolate a softer consistency. I hope that using melted chocolate with some margarine or oil and maybe an egg will do the same thing! Instead, you might want to use thick chocolate syrup.
