Hamantaschen, Apricot II (P, KLP, TNT)

Yield: 2 cups of filling

3/4 cup water or orange juice
1/4 cup lemon juice
1/2 to 3/4 pound (about 2to 3 cups) dried apricots
1/3 cup sugar
1 cup chopped walnuts

In small saucepan, place water or orange juice, lemon juice, apricots, and sugar. Heat fruit over low heat, stirring often to soften, about 8 to 12 minutes. Add additional water if mixture seems to require it or water in pot is evaporating too quickly.

Remove pot from stove and let mixture cool about 5 minutes. Place in food processor and puree, adding water or orange juice if mixture is too thick.

At this point, you may want to add additional sugar according to your taste if needed. Stir in walnuts.
