1 cup margarine softened
In mixer cream margarine and sugar. Add eggs, vanilla extract, lemon juice, and lemon rind. Mix until well blended.
Add flour, salt, and baking powder. Mix well. Turn dough out on board.
Cut into 4 pieces. Roll out each piece to about 1/4" thick, using a dusting of flour only if necessary. Cut into 3" to 4" circles and fill with 1/2 tsp of filling. Moisten edge of circle and pinch closed.
Place on a cookie sheet sprayed with vegetable spray and bake in a preheated 350°F oven for about 15 to 20 minutes (do not wait until the tops are brown).

Apricot, strawberry or any kind of filling actually (1/2 tsp. of filling guarantees no leakage)
The easiest recipe I make and does not require any time in the refrigerator or even any resting time. I made mine this morning. It took 1-1/2 hour from beginning to end. I highly recommend this recipe.
