2 cups matzo meal
Combine matzo meal, farfel, sugar, cinnamon, ginger, and salt. Stir in nuts and raisins.
Beat eggs, oil, and banana together very thoroughly. Add into dry mixture. Drop by teaspoonsful onto well greased cookie sheet. Bake at 350° for about 20 minutes or until browned.

My mom gave me this recipe years ago. I make it every year, and it's always a hit. Sometimes, I have to make it twice during the week of Passover!!

1 to 1-1/4 cups sugar
1 tsp. cinnamon
1/4 tsp. ginger
1/2 to 1 tsp. salt
1 cup walnuts, chopped
1 cup raisins
3 eggs, well beaten
1/2 cup banana, mashed
3/4 cup oil
I usually use gold raisins, but black are fine.
