Chocolate Spritz Cookies (P)

2/3 cup margarine
3/4 cup sugar
Pinch salt
3 egg yolks
2 tsp. vanilla
1/3 cup sifted cocoa
1-1/3 cup sifted flour

Preheat oven to 350°F.

Combine margarine, sugar, and salt. Cream thoroughly until light and fluffy. Add egg yolks and beat in, then add vanilla.

Carefully stir in cocoa then add flour mixing only until combined. Dough will be stiff.

Put into press and press out cookies.

Bake 11 to 12 minutes until they feel firm on top. Allow to stand for a few seconds on sheet then remove to cool. Make sure not to burn them.

Freezes well.
