Chocolate Lace Cookies II (D/P, TNT)
1 cup quick oats
Mix all ingredients, except chocolate chips, by hand to form batter.
Line cookie sheet with foil. Space out 1/2 teaspoons of batter (3 cookies across cookie sheet, they spread a lot).
Bake at 350°F for 8-10 minutes, until brown.
Let cool and harden. Gently peel from foil. Melt chips and spread thinly on smooth side of one cookie, put another cookie on top to make a sandwich.
Poster's Notes: Here is a recipe I got from someone on this list back in 6/99. It is fantastic, I have made them many times and never have any left. The best part is, unlike real Florentine cookies, these have no nuts, so people allergic to nuts can enjoy them to.
