Chocolate Chip Cookies, Pesach I (P, KLP, TNT)
Source: Self
Yield: 42

1/2 cup margarine
1/2 cup sugar (scant)
1/2 cup brown sugar
1 packet vanilla sugar, or 1 tsp. KLP vanilla, optional
1/3 cup potato starch
2/3 cup matzo cake meal
1 teaspoon KLP baking powder
1/4 teaspoon salt
1 egg
1 cup chocolate chips
1/2 cup chopped walnuts

Cream margarine and sugars. Beat in egg. Mix in dry ingredients. Add chocolate chips and nuts. Drop by spoonfuls onto a greased cookie sheet, at least 2" apart because they spread.

Bake about 12 minutes at 400°F. Be careful removing them, since they tend to crumble when hot (but will be hard to remove if you wait too long).

If you can't find KLP brown sugar, just use all white sugar. They'll still be good.

Poster's Notes:
This year I made some minor revisions to my Pesach chocolate chip cookie recipe and they came out better than ever. We were with a group of friends in the Galilee for the first few days of Pesach and I brought a batch to share. People couldn't believe that they were Pesachdik, and I had many requests for the recipe.
