Carrot Cookies, Chewy (P, TNT)

Yield: 4 dozen

1 cup of whole-wheat flour
1 tsp. baking powder
1/4 tsp. salt
1 cup quick-cooking rolled oats
1/2 cup walnuts, chopped, roasted
1/3 cup raisins
3 carrots, shredded
1/2 cup of "silan" (pure date-honey), or apple juice concentrate, or maple syrup
1/3 cup canola oil

Mix all the ingredients together and spoon drop the batter onto oiled cookie sheet.

Bake at 375°F for approximately 12 minutes.
