1 cup butter, softened
Cream butter with sugar until fluffy. Beat in egg. Stir in carrots and vanilla.
Combine flour, cinnamon, and baking soda. Stir into carrot mixture, mixing well. Stir in cereal.
Drop spoonfuls about 2" apart onto baking sheets. Bake in a 375°F oven for 10 to 12 minutes or until done.
