Brownies, Chocolate Zucchini (P)

Serves: 24

2-1/2 cups zucchini, grated
1/2 cup banana, ripe mushed
1 tablespoon water
2 teaspoons vanilla
2 cups flour, whole wheat and/or white
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1/3 cup cocoa powder
2/3 cup sugar

Mix wet ingredients. Mix dry ingredients.

Fold dry ingredients into wet, batter will be stiff.

Bake in nonstick oblong brownie pan at 350°F, 25-35 minutes until toothpick comes out clean.
