Biscotti, Orange-Cranberry (P, TNT)

Yield: Approximately 40

2/3 cup sugar
1/2 cup vegetable oil
1 tbsp. grated orange peel (I used at least 2 tbsp.--didn't measure)
1-1/2 tsp. vanilla extract
2 eggs
2-1/2 cups regular flour
3/4 cup dried cranberries, chopped coarsely (I don't bother to chop them)
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt

Heat oven to 350°F.

In a large bowl, stir together the sugar, oil, orange peel, vanilla, and eggs. Stir in the remaining ingredients.

Place dough on lightly floured surface and knead until smooth. On ungreased cookie sheet, shape half the dough into a 10"x3" log, then shape the other half.

Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool on the cookie sheet for 15 minutes.

Slice each log crosswise into 1/2" slices and turn each so a cut side is down on the cookie sheet. (I made mine a little thicker.)

Bake about 15 minutes longer, turning once, until crisp and light brown. Immediately remove from cookie sheet to a cooling rack. Cool completely.

Poster's Notes:
I decided that these could be even better dipped in chocolate. Although my melting chocolate experiment didn't work, I DID manage to spread melted chocolate chips on the cookies--and found I was correct. They were WONDERFUL with chocolate!
