Biscotti, Chocolate (D/P, TNT)

1/2 cup butter or margarine
1 cup sugar
2 tsp. almond flavoring
Approximately 1 tbsp. orange peals or zest from one small orange, chopped
3 eggs
1/2 cup almonds, slivered or chopped
1/2 cup walnuts, chopped
2-1/2 cups all-purpose flour
3 tsp. baking powder
1 tsp. salt
1/2 cup cocoa powder
Flour, for rolling
1 egg yolk

Cream together butter, sugar, almond flavoring, and orange zest. Beat in three eggs.

Stirring by hand, add in almonds and walnuts, flour, baking powder, salt and cocoa powder. Roll out dough on a floured board.

Lightly knead until smooth. Divide dough into three parts. Roll out into 12" rolls or the length of the baking pan. Brush on egg yolk. Put all three rolls on the baking tray.

Bake at 350°F for about 20 minutes or until brown. Cool. Cut widthwise with a sharp knife. Store in an airtight container.
