Squares, Lemon Pesach (D/P, KLP)

Yield: 20 squares

Cookie Dough:
1 cup butter or margarine, at room temperature
1 cup sugar
3 large eggs
1-3/4 cup plus 2 tablespoons matzo cake meal
2 tablespoons potato starch
1/4 teaspoon salt
Zest and juice of 1 medium lemon

4 large eggs
2 cups sugar
2 tablespoons potato starch
Juice of 2 lemons
2 tablespoons confectioners' sugar, for dusting, optional

Make Dough:
Preheat oven to 350°F.

Beat butter and sugar together until light. Beat in eggs.

Add matzo cake meal, potato starch, salt, and lemon juice and zest. Beat to combine. With damp hands, press dough into a 9" square pan. Bake 10 minutes.

Make Filling and Assembly:
Combine eggs, sugar, potato starch, and lemon juice.

Pour over baked crust and return to oven for 45 minutes. Cool in pan on wire rack. Sprinkle top with confectioners' sugar before serving, if desired. Cut into squares to serve.
