Squares, Lemon I (D/P)

1/2 cup butter, margarine, or softened shortening
1/4 cup confectioners' sugar, sifted
1 cup flour
2 eggs, well beaten
3 tbsp. fresh lemon juice
1 tsp. lemon peel, grated
1 cup sugar
1/4 tsp. salt
2 tbsp. cake flour, sifted
1/2 tsp. baking powder

Cream 1/2 cup butter. Add 1/2 cup confectioners' sugar and 1 cup flour. Blend well.

Press dough on bottom of 8" greased square cake pan. Bake in 350°F oven for 15 minutes.

Sift 1 cup sugar, 2 tbsp. flour and baking soda. Add eggs, lemon juice, lemon peel, and salt. Beat with hand mixer until well blended.

Pour over hot crust and bake 15 to 20 minutes. Let cool and sprinkle with confectioners' sugar. Cut into 2" squares.
