Squares, Apple (P)

1 egg, large
1 cup flour
1 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/2 cup margarine
1/2 cup brown sugar (less 1 tablespoon)
1/2 cup sugar (less 1 tablespoon)
1 tsp. vanilla
1 cup apples, diced
1/2 cup chopped pecans

Melt butter and mix with both sugars and the egg.

Mix the dry ingredients, flour, baking powder, salt, and cinnamon and then add to liquid and beat until smooth. Stir in nuts and apples and mix well.

Pour into an 8" square glass pan and bake for 35 to 40 minutes.

Author's Notes: The original Williams Orchard Apple Squares recipe came from Helen Williams Smith, an extension agent for Rappahannock County. She gave the recipe to Mary Williams, owner of the Williams Orchard. This dessert is so popular Mary gave some thought to selling the apple squares, but the family always ate them before they could ever get to market! Mary recommends using the Virginia York apple for the recipe, but you can also use either a Winesap or a Golden Delicious apple.
