Bars, Pumpkin Raisin (P, TNT)

3/4 cup raisins
1 tablespoon vanilla extract
1 cup all-purpose flour
1 cup white sugar
1 teaspoon pumpkin pie spice
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup vegetable oil
2 eggs
1 cup solid pack pumpkin (NOT pumpkin pie filling)

Preheat oven to 350°F.

Grease and flour (or at least grease) a 9"x13" baking pan.

Put raisins and vanilla in to a small bowl and mix well. Allow to sit until called for below.

Combine flour, sugar, spice, baking powder, baking soda, and salt in a mixing bowl. Mix thoroughly. Add oil and eggs, mix well, then add pumpkin and mix until all ingredients are combined and the batter is smooth. Add raisins and accompanying vanilla extract and mix until well distributed through the batter.

Pour batter into baking pan and bake 30-40 minutes or until done by the toothpick test. (That's the one where you stick a toothpick into the center and when you pull it out, if there's batter sticking to it, you let the bars bake a few more minutes then try again. Repeat until the toothpick comes out clean.)

Allow to cool at least an hour before cutting up. Okay, a half hour. At least don't try to cut it while still really hot.

This is really apropos of nothing except that, having mentioned this in a previous post, I feel like I ought to share the recipe. These were a REALLY big hit. I was asked to post the recipe to the list that sponsored the party last night (it was a local political/philosophical/you-get-the-idea group) and the list has nothing to do with cooking. So it seemed only sensible to share it here, as well.

(The recipe started out part of its life at allrecipes.com and another part of its life in a book entitled BREAD MACHINE MAGIC. Now I think it's all mine.)
