Bars, Orange Pesach (D, KLP, TNT)
Source: A friend from Venezuela
Yield:1 9"x9" or 11"x7" pan

Base:
1/2 cup butter, softened
1/2 cup sugar
2 cups matzo cake meal
1/2 teaspoon vanilla

Orange Topping:
1/2 cup orange marmalade preferably sweet orange marmalade
3 egg yolks
3 tablespoons sugar
1 cup walnuts, chopped

Make Base:
To the butter, slowly add the sugar and mix well.

Then add the flour and combine well. Extend the dough in the bottom of a buttered 9"x9" or 11"x7" baking dish and bake in a preheated 350°F oven for 10 to 15 minutes until lightly golden. Cool.

Make Topping and Assembly:
Spread the orange marmalade on top of the partially baked cookie dough then prepare a cream with the egg yolks and the sugar. Beat well until thickened and pale and spread over the marmalade.

Sprinkle the mixture with the walnuts and bake at 350°F for 8 to 10 minutes until golden. While still warm, cut into bars.

Poster's Notes:
For none-Passover use, can substitute 1-1/4 cups flour for the cake meal.

My recipe was shared with me about 30 years ago when I was the very young wife of my petroleum engineer Venezuelan husband at a Standard Oil outpost in the Venezuelan jungle. I became friends with a Venezuelan Jewish girl whose new husband was also there and she had her recipe book from her bubbie who was a holocaust survivor from Hungary. She gave my friend the handwritten recipe book with recipes from the grandma's grandma and that included these Orange Bars which she shared with me and so I share with you and think how nice that our recipes no matter from whence they come, have stayed with us just as our other customs and traditions.
