Bars, Mocha Nut for Passover (P, KLP, TNT)
Source: Unknown
Serves: 32

100g pareve bittersweet chocolate
200g margarine
4 eggs
2 cups sugar
1/2 teaspoon salt
2 tablespoons instant coffee powder
1 cup matzo meal
100g walnuts, chopped

Melt margarine and chocolate. (2 minutes in the microwave on HIGH.) Cool.

Beat eggs and sugar; add salt, margarine and chocolate. Stir in coffee and matzo meal and nuts. Turn into batter two 8"x8" pans.

Bake at 325F for approximately 40 minutes. Cut into squares while still slightly warm.

Poster's Notes:
You can use potato starch, but the results are not the same.

This is the Israeli version of the Pesach Brownie recipe; it is slightly different, and quite delicious. The crust is crisp and crunchy, with a lava-like center.

I've had the recipe since forever and don't remember the source.
