Bars, Lemon Melt Away (P, TNT)

Crust:
1-1/4 cups potato starch or combo with matzo cake meal
1/2 cup confectioners' sugar
Dash salt
7 ounces margarine at room temperature

Filling:
2-1/2 cups granulated sugar
3/8 cup all-purpose flour
7/8 cup lemon juice
1 7/8 teaspoons grated lemon zest
5 large eggs (1-1/8 cup measure)
Confectioners' sugar for decoration

In the bowl of a food processor, combine potato starch or combo with matzo cake meal, confectioners' sugar, and salt, pulse a few seconds, add butter and process until consistency of meal.

Press into a 9"X13" pan that has been greased well. (Sides of the pan should be dusted with flour). Bake in a 350°F for 20 minutes or until crust is lightly brown around the edges. Remove from oven.

In the bowl of an electric mixer beat eggs well, add granulated sugar and continue beating. Add lemon juice and lemon zest, beat again. Finally add potato starch or combo with matzo cake meal and combine very well.

Pour over crust and return to oven and bake for 15 to 20 minutes more or until a toothpick inserted into the center, comes out clean. Cool. Cut into small squares and sprinkle with confectioners' sugar.

Poster's Notes:
Allow lemons to sit in boiling water for five minutes or microwave for thirty seconds. This helps the lemon to produce more juice.
