Bars, Lemon I (D, TNT)

Yield: 3 dozen

2-1/2 cups all-purpose flour, divided
1/2 pound (2 sticks) butter, softened
1/2 cup powdered sugar, plus additional for sifting on top
2 cups sugar
1/2 cup lemon juice
4 large eggs
Grated zest of l lemon, optional

Preheat oven to 350°F. Spray a 9"x13"x2" pan with non-stick cooking spray.

In a large mixing bowl, combine 2-1/4 cups of the flour, butter, and powdered sugar. Mix until a soft dough forms.

Press dough into baking pan. Bake for 20 to 25 minutes, or until lightly browned. Remove from oven.

Meanwhile, beat sugar, lemon juice, the remaining 1/4 cup flour, eggs, and lemon zest until well combined. Pour over hot crust.

Return to oven and bake an additional 20 minutes, or until set. Cool on wire rack and cut into bars. Sift powdered sugar over the tops.
