Bars, Date Nut (D, TNT)

Yield: 5 dozen

4 eggs, well beaten
2-1/2 cups light brown sugar
1 can (1-2/3 cups) evaporated milk
2 tablespoons lemon juice
2-1/2 cups sifted all-purpose flour
1-1/2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1-1/2 cups chopped walnuts
1-1/2 cups chopped dates
2 cups unsifted confectioners' sugar
1 teaspoon grated orange peel
Few tablespoons whole or evaporated milk

Combine beaten eggs, brown sugar, evaporated milk and lemon juice in large mixing bowl. Sift together flour, soda, cinnamon and salt. Add all at once to egg mixture, stirring just until blended. Fold in walnuts and dates; do not overmix.

Spread batter in 2 well-greased jellyroll pans, 15-1/2"x10-1/2"x1". Bake in preheated oven at 350°F for 20 minutes. Cool.

Meanwhile, prepare frosting by combining confectioners' sugar and orange peel. Blend in milk, a few drops at a time until of desired spreading consistency. Frost cookies in pan before cutting into bars. Or dust with sifted confectioners' sugar instead of frosting if mailing.
