Shatta III (P, TNT)
Source: Daniel Rogov's "Siniya - The Taste of Paradise," From Lamb or Beef or Veal
Serves: 4

1 cup fresh chili peppers
1/2 cup each of parsley and coriander leaves
1 tbsp. minced garlic
1 tsp. each of salt, pepper and ground cumin
A pinch of ground cardamom

Puree together fresh chili peppers. Add parsley and coriander leaves, blending again. Add garlic, salt, pepper, cumin, and cardamom.

Keep in mind that this flavorful blend is fiery hot and should be used only in very small quantities.

Poster's Notes:
Zhoug (or zhug), the most popular spice mixture of Yemen, and now adapted to tastes throughout the Middle-East. It can be purchased at ethnic delicatessen stores but if you cannot find it, you can make it at home.
