Mayonnaise I (P, KLP, TNT)

Yield: About 1 cup

2 egg yolks or 1 whole egg
1/2 tsp. salt
Juice of half a lemon or 1 tsp. KLP vinegar
1/2 cup oil

Beat eggs with salt and lemon juice until mixed very well.

Very very slowly drip the oil into the egg mixture all the while beating. If using a processor with a feed tube that has a hole, pour oil in feed tube and allow to drip through. Continue beating until the mixture has solidified (about 3-4 minutes).

To make green mayonnaise, add finely chopped parsley, and dill before adding in oil.
