2 litres (quarts) of milk (Use 1% or skim milk.)
In a large pot, heat 2 litres (quarts) of milk until simmering. (Use 1% or skim milk.) Sprinkle in lemon juice, about 4 to 6 tbsp., until mixture begins to separate into curds and whey. Remove from heat.
Pour warm liquid into a cheesecloth-lined colander. Tie ends of cheesecloth and let drain for several hours. (Hang it over the faucet of the sink; put a bowl underneath to catch the whey.) For a firmer cheese, squeeze out most of the liquid. Wrap well and refrigerate.
