1 6-ounce package butterscotch chips
Fill bottom part of double boiler with cold water. Place on top of stove and set flame at low.
Pour butterscotch chips and peanut butter into top part of double boiler.
Set top part of double boiler (containing butterscotch chips and peanut butter) over bottom part (which is filled with water and already on the stove). Cook, stirring frequently, until melted.
Add cornflakes; stir with wooden spoon until evenly coated with peanut butter mixture.
If making haystacks, drop by teaspoonfuls onto waxed paper. Cool until set (15 to 20 minutes).
If making squares, grease 8"x8" square pan. Pour corn flake mixture into pan. Cool until set (about 2 hours). Cut into squares.
Store in refrigerator.

There are many versions of this treat ... but this one remains my favorite. I got the recipe years ago from my friend's little girl, and have loved them ever since.

3 cups cornflakes
Although chow mein noodles can be substituted for more authentic-looking "haystacks," I much prefer the taste with cornflakes.
