Fudge, Carob (P)
Yield: About 16 pieces

1 cup honey
1 cup peanut butter
1 cup carob powder
1/2 cup sesame seeds, unhulled
1 cup sunflower seeds, hulled
1/2 cup shredded coconut
1/2 cup chopped dates

In saucepan, heat honey and peanut butter until mixture bubbles slightly. Remove from heat.

Stir in carob powder. Stir in sesame seeds, sunflower seeds, coconut and dates. Pour into greased 8"x8" square pan.

Refrigerate until firm, about 2 hours. Cut into squares.

Poster's Notes:
Shayla Goldstein says: I'll try this with almond butter, since I can't eat peanuts.

Ruth Baks says: This recipe is a little similar to the one I posted for the Nutty Carob Balls. To replace the peanut butter, you may substitute natural tehina (raw sesame paste, no added spices) and it works very well. When I use tehina instead of chunky peanut butter, I do add (unsalted) sunflower seeds (for the crunch) and it's a great combination.
