1-1/4 cups sugar
Lightly oil a 9"x13" (or so) sheet pan and set aside.
Combine the sugar, corn syrup, honey and water in a deep medium saucepan. Bring it to a boil over medium-high heat and cook until temperature reaches 300°F on a candy thermometer. It will take about 10 minutes.
Remove the pan from heat, add the 1 tbsp. of baking soda, whisk vigorously for 5 seconds (mixture will foam up and turn light opaque orange) and then immediately pour into the prepared pan. Don't smooth it down or touch it more than needed to get it out of the saucepan.
Set it aside to cool completely and then break into pieces.
Poster's Notes:
There are inevitably lots of crumbs left after breaking it apart. The crumbs are delicious on vanilla ice cream.
