1 stick of butter or margarine, softened
Beat butter and sugar together until light. Add bourbon and mix well. Form into small balls the size of a large cherry. I use a tiny ice cream scoop and leave the bottom flat.
Tuck a pecan half into the bottom of each before placing on waxed or parchment paper lined dish. Refrigerate overnight.
Melt chocolate. Dip the chilled bourbon balls into the chocolate. Place on waxed paper and refrigerate until chocolate hardens. Cover and refrigerate.
They are even better after a day in the fridge. They freeze perfectly. ( I generally use 8 oz of semisweet chocolate instead of the mixture). Serve in foil candy papers or on a doily-lined tray.
This tastes just like the famous Kentucky bourbon candies.
