1-1/4 cups flour
1 cup sugar
1 tsp. each baking powder and ground cinnamon
1/4 tsp. salt
1/4 cup oil
2 large eggs
1 tsp. vanilla extract
1 cup shredded zucchini
1/2 cup semisweet chocolate chips
Heat oven to 375°F. Have ready a non stick 8" square baking pan.
Mix flour, sugar, baking powder, cinnamon, and salt in pan.
Mix in oil, eggs, and vanilla.
Stir in zucchini just until blended.
Bake 25-30 minutes until cake is golden brown and springs back when lightly pressed. Remove to a wire rack. Sprinkle with chocolate chips and let sit 4 minutes until shiny. Gently spread to cover cake.
Cool cake in pan on rack about 30 minutes before cutting in 2" squares.
Poster's Notes: I wanted to share this one that's saved me many a Shabbes in my little apartment with no oven. This is so moist and error-free and it came out in the microwave (high on 6-7 minutes or so, depending on your microwave) and it ROSE. For those of you cooking with only a microwave, this is almost unheard of.
Note: I didn't use the chocolate chips because I didn't have any.
