Make Torte:
Place a piece of parchment paper in the bottom of the pan. Wrap the outside of the pan with several layers of extra long heavy-duty foil, bringing the edges up over the rim of the pan to secure it. Have ready another baking pan large enough to hold the 10" round with space around to hold water. Boil water in a pot or tea kettle and set aside.
Place chocolate in a processor bowl and pulse-chop until the chocolate is finely grated.
Combine butter, sugar, wine, and jam in a medium saucepan. Heat over medium, stirring occasionally until sugar dissolves and butter is melted. Increase heat and bring to a boil.
Turn the processor on and pour the hot liquid through the feed tube. Process until the chocolate is melted.
Whisk the eggs together. With the processor going, add the eggs through the feed tube and process just to incorporate the egg. Scrape the bowl and pulse a few more times.
Pour the batter into the prepared pan. Place in the larger pan and pour the boiling water around it until the water comes half way up the sides of the round pan (this is called a "bain marie").
Bake for 45 minutes at 325°F. The surface will still be shiny, but dry to the touch. Remove from the water bath and cool completely on a wire rack. Refrigerate until ready to decorate and serve.
Assembly:
The cake can be served cold or at room temperature, but will be easier to slice if served at room temperature.
Decorate the torte with the whipped cream and the berries.
To enhance the appearance of each slice, wipe the knife blade off with a damp cloth between cuts.

16 oz. semi-sweet Passover chocolate, chopped (or chips)
4 sticks unsalted butter
1 cup sugar
1 cup Passover blackberry wine
1/2 cup seedless raspberry jam
8 large eggs, room temperature
1 carton cream
1-1/2 pt. fresh raspberries
Preheat oven to 325°F with a shelf in the middle of the oven. Grease a 10" round springform pan with butter.
Run a thin knife around the outside of the torte and then remove the springform ring.
Use the finest Passover chocolate you can find.
