Sponge Cake:
Pineapple Cream:
Make Cake:
Beat the yolks with 1 cup sugar until thick and lemon-colored. Add the flour mixture to the yolk mixture alternately with the combined water and lemon or orange juice. Beat until almost stiff.
Take egg whites and add the cream of tartar. Then, while adding the remaining sugar gradually, beat until stiff. Fold into the yolk and flour mixture.
If you use a removable bottom tube pan, pour the cake batter in without greasing the pan. If you use two 8" layer pans, grease and flour the pans. You can also use a jellyroll pan and line it with parchment paper.
Bake the tube pan 40 to 50 minutes and invert over a bottle to cool. Bake the layer pans about 20 minutes and cool on racks. For the jellyroll pan, bake also about 20 minutes, then turn out onto a towel to cool.
Cut the tube cake in half to make 2 layers.
Make Pineapple Cream and Assembly:
Whip the cream.
Sprinkle the cake or layers of the cake with reserved pineapple juice. Spread with the butter mixture on all layers. Place the whipped cream over the butter mixture using equal amounts on both layers, smoothing the cream evenly to cover. Do not mix the butter mixture with the whipped cream. It will create a different flavor. Don't be concerned that the cream seems not to be sweet enough. It will be when the flavors are eaten together.
Put the layers together.

6 eggs, separated
1 cup flour
1-1/2 cups sugar, divided
1 tsp. baking powder
3 tbsp. water
1 1/2 tsp. lemon or orange juice
1/4 tsp. cream of tartar
1 6 to 8 oz. can crushed pineapple, drained, juice reserved
1/4 lb. unsalted butter, softened (don't substitute)
2 cups confectioners' sugar
1 egg yolk
2 cups whipping cream whipped without sugar (use the full amount for the correct degree of sweetness when all is combined)
Preheat the oven to 350°F. Sift the flour with the baking powder.
Combine the butter with the powdered sugar, egg yolk, and drained pineapple.
You won't forget this cake. It is a delicacy for the most discerning.
