Sponge Cake, Honey II (P, TNT)

4 egg yolks
3/4 cup sugar
1 cup liquid honey
1 cup canola oil
1 cup strong coffee (2 tbsp. instant coffee in hot water), cooled
1 tsp. cinnamon
1/2 tsp. ground cloves
Pinch salt
3-1/2 cups white flour
1 tsp. baking powder
1 tsp. baking soda
1/2 cup almonds or walnuts, chopped, optional
4 egg whites
1/4 cup white sugar

Mix first 8 ingredients together with a whisk to dissolve the sugar. Add flour, baking powder, baking soda, and nuts.

Whip egg whites to form peaks, but not dry; fold into batter just to mix.

Pour into an oiled and floured tube pan. Bake in lower 1/3 of oven at 350°F for 50 minutes. Test with toothpick; can be a little wet (very little). If toothpick is very dry the cake will be dry.

This cake freezes well. (Cut portions and wrap.)
